Apple, Goat Cheese and Fig Jam Crostini

Apple, goat cheese and fig jam crostini combines creamy goat cheese, sweet fig jam, crisp apples, hot honey and crunch walnuts on toasted crostini. It's an easy appetizer with a fun mix of sweet, savory and spicy flavors.

- 1 baguette
- 2 ½ tablespoons olive oil, divided
- ¼ teaspoon salt
- 5 ounces goat cheese
- ½ - ¾ cup fig jam
- ½ Granny Smith apple thinly sliced and cut into small pieces
- hot honey
- 2 tablespoons walnuts finely chopped
Preheat oven to 400℉. Line a baking sheet with parchment paper or a silicone mat.
Finely chop the walnuts and set aside. Thinly slice the apple, then cut each slice into smaller pieces that will fit nicely on the crostini and set aside.
Add the goat cheese, 1 ½ teaspoons of olive oil and salt to a small food processor. Blend until creamy, about 1 minute, scraping down the sides once or twice.
Slice the baguette into ½ inch slices, approximately 24 slices. Add 2 tablespoons of olive oil to a very small bowl and use a pastry brush to lightly brush both sides of the baguette slices.
Place the baguette slices in a single layer on the baking sheet. Bake for 7 to 8 minutes, flipping halfway, until the edges are lightly browned and the surfaces are crisp.
Allow the toasted bread to cool.
Spread a thin layer of goat cheese and then a thin layer of fig jam on each slice. Top with a layer of apple pieces.
Lightly drizzle hot honey over the apple slices and then sprinkle the chopped walnuts on top.
Arrange the finished crostini on a serving plate and enjoy!
