Easy Cranberry Brie Crostini

Cranberry brie crostini with pistachios is an elegant appetizer that is quick and easy to assemble. Slices of creamy brie sit on top of sweet and tangy cranberry sauce on crisp toasted baguette, finished with a sprinkle of crunchy pistachios. They are perfect for effortless entertaining.

Ingredients
  

  • 1 baguette
  • 2 tablespoons olive oil
  • 8 ounces brie cheese
  • 2 cups cranberry sauce homemade or store bought
  • ½ cup salted pistachios rough chopped

Instructions
 

  • Preheat the oven to 400 ℉. Line a baking sheet with parchment paper or a baking mat.
  • Slice the baguette into ½ to ¾ inch slices. Lightly brush each side of the baguette slices with olive oil. Place in a single layer on the baking sheet. Bake for 8 minutes, flipping over half way. Allow to cool.
  • Spread a layer of cranberry sauce onto each slice.
  • Slice the brie cheese into pieces slightly smaller than the baguette slices. Layer the brie cheese on top of the cranberry sauce.
  • Rough chop the pistachios. Sprinkle them on top of the brie and lightly press down. Serve and enjoy!
