Waffle ingredients
- 2 cups all-purpose flour
- ¼ cup sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1-2 teaspoons pumpkin pie spice
- 1 cup canned pumpkin puree
- 3 eggs
- 1 ½ cup whole milk warm
- 5 tablespoons salted butter melted
- 1 teaspoon vanilla
In a large bowl, whisk together the flour, sugar, baking powder, salt and pumpkin pie spice until evenly combined.
In a medium bowl, beat the eggs. Stir in the canned pumpkin, warm milk, melted butter and vanilla until combined.
Pour the wet ingredients into the dry ingredients and stir just until combined and no large lumps remain, about 30 seconds. Avoid over-mixing.
Let the batter rest for 10 minutes. Then, preheat your waffle maker.
Cook the waffles according to the manufacturer’s instructions. This recipe makes about 5 to 6 waffles.
If not serving immediately, place the cooked waffles on a cooling rack lined with parchment paper to keep them from sticking to the rack.
Top with salted butter, maple syrup and chopped pecans or your favorite toppings. Enjoy!
Note about the pumpkin pie spice: use 2 teaspoons if you really like pumpkin pie spice or 1 teaspoon if you aren't sure. To make 2 teaspoons of pumpkin pie spice, use the following measurements:
- 1 ¼ teaspoons cinnamon
- ¼ teaspoon cloves
- ¼ teaspoon ginger
- ⅛ teaspoon allspice
- ⅛ teaspoon nutmeg
