Peanut butter oatmeal balls are an easy no bake snack made with peanut powder, crunchy peanut butter, oats and chocolate chunks. They're great for meal prep and perfect for a quick breakfast, afternoon snack or post workout bite.

- ¼ cup peanut powder
- ¼ cup water
- 1 cup crunchy peanut butter
- 1 cup old fashioned oats
- ¼ cup ground flaxseed
- ¼ cup maple syrup
- ½ cup chopped chocolate or chips
Add the peanut powder and water to a medium bowl. Stir until the peanut powder has dissolved.
Add the crunchy peanut butter, old fashioned oats, ground flaxseed, maple syrup and chopped chocolate chunks to the bowl. Stir until all the ingredients are evenly combined.
Using a medium cookie scoop, measure out 2 tablespoon portions and shape them into balls. Place them on a baking sheet or plate and refrigerate for 2 hours or until firm.
Serve immediately or store in an airtight container in the refrigerator. Enjoy!
