Made with peanut powder, crunchy peanut butter, maple syrup, old fashioned oats, ground flaxseed and chopped chocolate chunks, these protein-packed bites come together in minutes with simple pantry ingredients. They're soft and chewy with crunchy bits of peanut butter and chocolate throughout and have all the convenience of peanut butter energy balls but with an even bigger peanut flavor. They take just a few minutes to mix together, require no baking and are great for meal prep. Ingredients

- Peanut powder
- Water
- Crunchy peanut butter
- Old fashioned oats
- Ground flaxseed

Instructions

Step 1: Add the peanut powder and water to a medium bowl. Stir until the peanut powder has dissolved.

Step 2: Add the crunchy peanut butter, old fashioned oats, ground flaxseed, maple syrup and chopped chocolate chunks to the medium bowl.

Step 3: Stir until all the ingredients are evenly combined.

Step 4: Using a medium cookie scoop, measure out 2 tablespoon portions and shape them into balls. Place them on a baking sheet or plate and refrigerate for 2 hours or until firm. Serve immediately or store in an airtight container in the refrigerator.

Substitutions and Variations
- Gluten free - these oatmeal balls are naturally gluten free as long as the oats and other ingredients are certified gluten free.
- Vegan - use vegan chocolate chunks and verify that all the other ingredients are vegan.
- Maple syrup - you can substitute honey or agave syrup for the maple syrup. A liquid sweetener is important in this no bake recipe because it adds sweetness while also helping bind the ingredients together so the peanut butter balls hold their shape.
- Chocolate - use your favorite chocolate. I love chopped dark chocolate, but you can use chips or chunks of milk, semi-sweet, dark or even white chocolate.
- Chunky peanut butter - you can substitute another chunky or creamy nut butter or seed butter for the chunky peanut butter.
- Peanut powder - you can substitute protein powder for the peanut powder like in my chocolate protein powder bites. Protein powder will increase the protein content, but peanut powder gives these balls a stronger peanut flavor. You could also use a peanut flavored protein powder.

Next Level Tips
- Not everyone loves the flavor of protein powder and protein powder isn't appropriate for everyone, so this is a more family friendly version of my chocolate protein powder bites. However, not everyone can have peanuts either. There are other nut butters and seed butters that can be substituted for the peanut butter and there are also many other nut powders that can be substituted for peanut powder. For a fun version, you could even use a fruit powder like raspberry powder or strawberry powder. Even Trader Joe's sells berry powders.
- I love cookie scoops for quickly portioning out of the right amount for shaping each ball. I highly recommend getting a set of cookie scoops that include a small one tablespoon scoop, a two tablespoon scoop and a ¼ cup scoop. This recipe uses the medium two tablespoon scoop, my chocolate peanut butter truffles recipe uses the one tablespoon scoop and my oatmeal breakfast cookies recipe uses the ¼ cup scoop. And that's just for starters!
