I'm trying to sneak more protein into my diet. Isn't everyone these days? That's why I like to make these chocolate protein powder bites and keep them on hand throughout the week. Store bought protein bars often contain more sugar and more unrecognizable ingredients than I'd like, so I prefer simple grab and go snacks made with ingredients I recognize. The best part is that these protein powder bites are perfect for meal prep and can double as a quick snack or an easy breakfast when you're short on time.

Ingredients

- Chocolate protein powder
- Water
- Crunchy almond butter
- Ground flaxseed
- Maple syrup
- Old fashioned oats
- Chocolate chips

Instructions

Step 1: Add the chocolate protein powder and water to a medium bowl. Stir until the protein powder is fully dissolved and makes a paste.

Step 2: Add the ground flaxseed, maple syrup, crunchy almond butter, old fashioned oats and chocolate chips to the bowl.

Step 3: Stir until all the ingredients are combined and evenly distributed.

Step 4: Using a medium cookie scoop, measure out 2 tablespoon portions and then shape them into balls. Place the balls on a baking sheet and refrigerate for 2 hours to set them. Serve or place the balls in an airtight container.

Substitutions and Variations
- Gluten free - these protein bites are naturally gluten free as long as the old fashioned oats and other ingredients are certified gluten free.
- Vegan - to make these protein balls vegan, use a vegan protein powder and vegan chocolate.
- Maple syrup - you can substitute honey or agave syrup for the maple syrup. A liquid sweetener is important in this no bake recipe because it adds sweetness while also helping bind the ingredients together so the protein bites hold their shape.
- Chocolate - use your favorite chocolate. I love chopped dark chocolate, but you can use chips or chunks of milk, semi-sweet, dark or even white chocolate.
- Chunky almond butter - you can substitute another chunky or creamy nut butter or seed butter for the chunky almond butter.
- Protein powder - you can substitute another flavor of protein powder or even peanut butter powder like we use in my no bake peanut butter oatmeal balls.

Store in an airtight container in the refrigerator for up to 7 days.

- I recommend using a protein powder flavor and brand that you like. Some protein powders have a strong, distinct flavor that can overwhelm many other more subtle flavors. Plus, you'll need to decide if you want a plant based powder or an animal based protein powder.
- You can shape these bites into a different size or shape if you wish. I find the balls are a convenient size to make and an easy size to eat.
FAQ
Ground flaxseed can be found at most grocery stores, but if you don't have it or don't want to use it, you can substitute chia seeds or more oats in place of the ground flaxseed.
Yes, refrigeration is recommended. Almond butter and maple syrup will hold the bites together at room temperature, but they tend to become softer and sticky as they sit. Chilling helps the balls hold their shape and improves the texture. In addition, many almond butters require refrigeration.
