Whipped Tofu with Truffle Garlic Bread

Whipped Tofu with Truffle Garlic Bread combines airy, creamy tofu with crunchy garlic toast and layers of truffle oil. The creamy tofu has a cheesy, earthy flavor while the crisp garlic bread brings an umami flavor creating a perfect balance of textures and flavors.

Equipment

  • 1 food processor or blender

Ingredients
  

Whipped Tofu

  • 1 package firm tofu (16 ounces)
  • 1 tablespoon nutritional yeast
  • 1 teaspoon truffle oil
  • 1 teaspoon salt
  • ½ teaspoon garlic powder

Garlic Bread

  • 1 baguette (or bread of choice)
  • 2 tablespoons plant-based butter
  • 2 garlic cloves minced
  • 1 teaspoon truffle oil
  • salt to taste

Optional Garnish

  • fresh parsley chopped
  • ½ teaspoon truffle oil

Instructions
 

Press and whip the tofu

  • While removing the tofu from the package, drain any excess liquid. Wrap the tofu in a clean tea towel or layers of paper towel and place on a plate. Place another plate on top and add weight on top (like a can of tomatoes or beans) of the plate to press the tofu. Leave for 30 minutes.
  • Add the pressed tofu, nutritional yeast, truffle oil, garlic powder and salt to a food processor. Blend until light and airy, 30 to 60 seconds. Don't over-blend.
  • Add the whipped tofu to a bowl and serve.
  • Optional: add finely chopped parsley and drizzle ½ teaspoon truffle oil on top of the whipped tofu for garnish.

Make a garlic bread

  • Preheat the oven to broil. Or turn the grill to medium high heat.
  • Cut a baguette (or bread of choice) into 8-12 pieces and set aside.
  • Melt 2 tablespoons of plant-based butter in the microwave for 15-30 seconds. Add the minced garlic and 1 teaspoon of truffle oil to the melted butter.
  • With a pastry brush or a small spatula, spread the melted garlic truffle butter on to each piece of bread
  • Place the bread on a baking sheet with the buttered side up and broil until the edges are browned to taste (approximately 2 minutes). [Grilling takes a similar amount of time. To grill, place the bread on the grill with the buttered side down and check for grill marks after 1 minute. If grill marks are well defined on the garlic bread, remove it from the grill. If not, grill for one additional minute and check again.]
  • Finish the garlic bread with a light dusting of salt from a salt shaker. Serve with the whipped tofu.
