I love whipped tofu. It's super easy to make, and it has a similar texture to whipped ricotta which makes it a perfect dairy-free vegan spread for crunchy truffle garlic toast. We make whipped tofu by blending firm tofu in a food processor until it becomes light and creamy. It's really that easy. Then truffle oil is layered throughout the whipped tofu and the garlic toast adding a rich, earthy umami flavor that takes this appetizer to the next level!

What is Nutritional Yeast?
Nutritional yeast is a deactivated yeast that is most often sold as small flakes. It has a savory, nutty, cheesy flavor, so it's perfect for vegan dishes. Tofu doesn't have a strong flavor on its own, so the nutritional yeast gives the whipped tofu more of a cheesy flavor. Whipping tofu with nutritional yeast helps bring the flavor and texture similar to a whipped ricotta. But, it's actually even better!
Substitutions
- Truffle oil - if you don't have truffle oil, you can substitute olive oil or another favorite flavor of oil.
- Garlic bread - you can skip the garlic bread and serve the whipped ricotta tofu with regular bread, crackers or veggies. Or use it as a spread for sandwiches and wraps.

Storage
Store any leftovers separately in airtight containers in the refrigerator for 3-4 days. Before serving, give the whipped tofu ricotta a stir if the texture has firmed up.

FAQ
You can use either in this recipe. White truffle oil can sometimes be more peppery and garlicky while black truffle oil can be bolder and earthier. Both will work! There are also flavored truffle oil options out there that are infused with garlic, jalapeños and chilis. New flavors are available all the time.
We use drained, firm tofu as it creates a light, airy texture when whipped. Soft or silky tofu doesn't whip as well and can have a mushy texture.

- 1 food processor or blender
Ingredients
Whipped Tofu
- 1 package firm tofu (16 ounces)
- 1 tablespoon nutritional yeast
- 1 teaspoon truffle oil
- 1 teaspoon salt
- ½ teaspoon garlic powder
Garlic Bread
- 1 baguette (or bread of choice)
- 2 tablespoons plant-based butter
- 2 garlic cloves minced
- 1 teaspoon truffle oil
- salt to taste

- fresh parsley chopped
- ½ teaspoon truffle oil
Instructions
Press and whip the tofu
- While removing the tofu from the package, drain any excess liquid. Wrap the tofu in a clean tea towel or layers of paper towel and place on a plate. Place another plate on top and add weight on top (like a can of tomatoes or beans) of the plate to press the tofu. Leave for 30 minutes.
- Add the pressed tofu, nutritional yeast, truffle oil, garlic powder and salt to a food processor. Blend until light and airy, 30 to 60 seconds. Don't over-blend.
- Add the whipped tofu to a bowl and serve.
- Optional: add finely chopped parsley and drizzle ½ teaspoon truffle oil on top of the whipped tofu for garnish.
Make a garlic bread
- Preheat the oven to broil. Or turn the grill to medium high heat.
- Cut a baguette (or bread of choice) into 8-12 pieces and set aside.
- Melt 2 tablespoons of plant-based butter in the microwave for 15-30 seconds. Add the minced garlic and 1 teaspoon of truffle oil to the melted butter.
- With a pastry brush or a small spatula, spread the melted garlic truffle butter on to each piece of bread
- Place the bread on a baking sheet with the buttered side up and broil until the edges are browned to taste (approximately 2 minutes). [Grilling takes a similar amount of time. To grill, place the bread on the grill with the buttered side down and check for grill marks after 1 minute. If grill marks are well defined on the garlic bread, remove it from the grill. If not, grill for one additional minute and check again.]
- Finish the garlic bread with a light dusting of salt from a salt shaker. Serve with the whipped tofu.
