White truffle garlic bread with whipped ricotta is a savory, creamy delight that combines earthy truffle oil, garlicky bread and airy Ricotta for an out of this world taste.

Ingredients
  

Whipped Ricotta

  • 1 cup Ricotta cheese
  • 2 tablespoon Grana Padano cheese
  • 1 teaspoon plus ½ teaspoon white truffle oil separated
  • 1 tablespoon parsley finely chopped
  • ¼ teaspoon salt

Garlic Bread

  • 1 baguette
  • 2 tablespoon melted salted butter
  • 2 garlic cloves finely minced
  • 1 teaspoon white truffle oil
  • salt for finishing
  • 1 tablespoon Grana Padano for finishing

Instructions
 

Whipped Ricotta

  • Add Ricotta cheese, 2 tablespoons of Grana Padano cheese, 1 teaspoon of white truffle oil, and ¼ teaspoon of salt to food processor and whip until creamy. It will take approximately 30-60 seconds. It comes together very quickly.
  • Put whipped Ricotta in small dipping bowl and drizzle ½ teaspoon white truffle oil on top. Top with chopped parsley as garnish.

Garlic Bread

  • Preheat oven to broil. Or turn grill to medium high heat.
  • Cut baguette (or bread of choice) into 8 pieces and set aside.
  • Melt 2 tablespoons of butter in the microwave for 15-30 seconds. Add minced garlic and 1 teaspoon of white truffle oil to melted butter.
  • With a pastry brush or a small spatula, spread melted garlic butter on to each piece of bread.
  • Place bread on baking sheet with buttered side up and broil until edges are browned to taste (approximately 2 minutes). [Grilling takes a similar amount of time. To grill, place bread on grill with the buttered side up and turn after 1 minute so that buttered side is down. Check for browning after an additional minute and remove when grill marks appear on bread.]
  • Place garlic bread on serving plate and sprinkle 1 tablespoon of Grana Padano over the garlic bread. Finish with a light dusting of salt from a salt shaker.
  • Serve with whipped Ricotta on the side and enjoy!
