Whipped Ricotta Truffle Oil with Garlic Bread

White Truffle Garlic Bread with Whipped Ricotta is a quick appetizer when you want to treat yourself or your guests. Whipped Ricotta with truffle oil is a silky, creamy spread with the rich, distinct flavor of truffles. It adds the perfect umami flavor to garlic bread, and it's super simple to make.

Whipped Ricotta Truffle Oil with Garlic Bread

Confession time: I love bread. Like I really, really love bread. It's my comfort food. It's one of my top 5 favorite foods. You know, the kind of food you could eat everyday if you were deserted on a desert island? There aren't many things that can make bread better. But garlic butter with truffle oil and creamy whipped Ricotta cheese? It's the perfect savory, heavenly combination. And the Grana Padano takes this White Truffle Garlic Bread with Whipped Ricotta to a whole next level!

This is an easy yet impressive appetizer for a party. Or it's quick enough to use as a side dish for a family dinner too. So many options!

Ingredients

Ingredients needed to make whipped ricotta with truffle oil and garlic bread
  • Ricotta cheese
  • Grana Padano cheese
  • White truffle oil
  • Galic cloves
  • Salted butter
  • Salt
  • Parsley
  • Bread for serving

Substitutions

  • Truffle Oil - you can also use black truffle oil or another flavored truffle oil if you already have one on hand.
  • Grana Padano Cheese - you can substitute Parmigiano Reggiano (or Parmesan cheese). However, Grana Padano is usually cheaper than real Parmigiano Reggiano cheese. Grana Padano and Parmigiano Reggiano are made differently and come from different parts of Italy, but they do have a similar flavor profile. Grana Padano is a bit more mild, but I use the two cheeses interchangeably.

Storage

Store the whipped ricotta and any leftover garlic bread in the refrigerator, separately, in an airtight container for 2-3 days.

Next Level Tips

  • This recipe adds truffle oil at multiple different stages for layers of flavor! Don't skip any of the stages.
  • If you are already using the grill for other food, grill this garlic bread after the other food is done. The grill adds that distinct smoky flavor that elevates your garlic bread to an even higher level. Plus, then the oven won't heat up the house in the summer.

FAQ

Can I use a different type of truffle oil?

Yes! You can easily substitute black truffle oil. Black truffle oil is often less expensive as well. There are also other different flavors of truffle oil that you can experiment with as well. Costco often sells a multi-flavored assortment of truffle oils.

What is in truffle oil?

Truffle oil is typically an olive oil base, but some brands use neutral oils. The oil is then often infused with truffles, truffle oil concentrate or extract and/or truffle favoring. Always check the ingredient list!

Equipment

  • 1 Food processor

Ingredients
  

Whipped Ricotta

  • 1 cup Ricotta cheese
  • 2 tablespoon Grana Padano cheese
  • 1 teaspoon plus ½ teaspoon white truffle oil separated
  • 1 tablespoon parsley finely chopped
  • ¼ teaspoon salt

Garlic Bread

  • 1 baguette
  • 2 tablespoon melted salted butter
  • 2 garlic cloves finely minced
  • 1 teaspoon white truffle oil
  • salt for finishing
  • 1 tablespoon Grana Padano for finishing

Instructions
 

Whipped Ricotta

  • Add Ricotta cheese, 2 tablespoons of Grana Padano cheese, 1 teaspoon of white truffle oil, and ¼ teaspoon of salt to food processor and whip until creamy. It will take approximately 30-60 seconds. It comes together very quickly.
  • Put whipped Ricotta in small dipping bowl and drizzle ½ teaspoon white truffle oil on top. Top with chopped parsley as garnish.

Garlic Bread

  • Preheat oven to broil. Or turn grill to medium high heat.
  • Cut baguette (or bread of choice) into 8 pieces and set aside.
  • Melt 2 tablespoons of butter in the microwave for 15-30 seconds. Add minced garlic and 1 teaspoon of white truffle oil to melted butter.
  • With a pastry brush or a small spatula, spread melted garlic butter on to each piece of bread.
  • Place bread on baking sheet with buttered side up and broil until edges are browned to taste (approximately 2 minutes). [Grilling takes a similar amount of time. To grill, place bread on grill with the buttered side up and turn after 1 minute so that buttered side is down. Check for browning after an additional minute and remove when grill marks appear on bread.]
  • Place garlic bread on serving plate and sprinkle 1 tablespoon of Grana Padano over the garlic bread. Finish with a light dusting of salt from a salt shaker.
  • Serve with whipped Ricotta on the side and enjoy!
