Chicken Caesar Salad Sandwich is an easy meal that brings together a classic Caesar salad and a chicken salad sandwich. It is made with chopped chicken, grated parmesan cheese, mini croutons, romaine lettuce and creamy Caesar dressing. Everything gets packed onto toasted bread or a soft hoagie roll for something quick that works for lunch, dinner or anytime you want something simple and satisfying.

Caesar salad and chicken salad sandwiches have both been around for a while, and I am not totally sure which came first. Either way, this feels like a combination that should have happened sooner. Simple, familiar, and it just works. It is basically a chicken Caesar salad turned into a handheld sandwich.
But, the best part is this chicken Caesar salad filling is not limited to sandwiches. The same filling works in a wrap or turned into a quick chicken Caesar salad bruschetta for an easy appetizer. It is one of those recipes that changes depending on what you are in the mood for.

Ingredients

Substitutions
- Gluten free - Use gluten free bread and gluten free croutons. You can also skip the croutons and use romaine leaves as a wrap if you want something gluten free and lighter.
- Parmesan cheese - I always recommend real Parmigiano Reggiano cheese. If you don't have that or it's too expensive, I recommend using Grana Padano cheese next.
Chicken Caesar Wrap Variation
Chopped chicken Caesar salad works great as a wrap too. Just place about a cup of the chicken Caesar salad mixture in a large burrito-size tortilla and roll. Perfect for a trip to the beach or the lake.

Chicken Caesar Bruschetta Variation
Fun bruschetta flavors are currently having a moment right now. Have you seen my smoked salmon bruschetta, caprese bruschetta and butternut squash toast recipes? Well, chicken Caesar salad makes a great bruschetta topper too! Just use the same method for the bread from the smoked salmon bruschetta recipe, then chop the chicken Caesar salad from this recipe into much smaller pieces, top the bread with it and you've got yourself chicken Caesar salad bruschetta! When I make chicken Caesar salad bruschetta, I like to finish it with extra grated parmesan and more cracked black pepper. Optional tip: for better sticking power, lightly brush the bruschetta bread with a bit of Caesar dressing before topping with the salad.

Storage
Store in an airtight container in the refrigerator for up to 3 days if stored separately. If the chicken Caesar salad has already been spread on the bread, store the sandwich in an airtight container in the refrigerator until the next day.

- If you don't have leftovers and need a shortcut, store bought cooked chicken strips work too. I promise I won't judge.
- Feeding the whole family? Just change the recipe quantity to 2x or 3x.

Yes, of course you can make your own Caesar salad dressing. Or you can use your favorite bottled Caesar dressing. Caesar salad dressing is one of those things that I have no desire to make. I love Caesar salad, but don't ask me to tell you what's in the ingredients. Raw eggs and anchovies? No thank you! But if you want to give it a try, here is currently one of the most popular homemade Caesar salad dressing recipes out there.
Yes, you can use full romaine heads or a different type of lettuce. Or even spinach or kale. However, romaine lettuce hearts are crisper and tastier, so that's what I recommend.
If you can't find mini croutons, you can chop larger size croutons into smaller pieces or you can give larger croutons a few pulses in a food processor or blender.
Fresh is best for salad, you can make the salad a day ahead of time. It's a great make-ahead recipe for a picnic or trip to the lake.

Ingredients
- 2 cups romaine lettuce hearts chopped small
- 1 cup cooked chicken chopped small
- ½ cup mini croutons
- ½ cup parmesan cheese grated
- ⅓ cup Caesar salad dressing
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 hoagie or sandwich rolls (or bread of choice)
Instructions
- Combine all the ingredients in to a large bowl. Mix until all ingredients are coated with the Caesar salad dressing. Add any more Caesar salad dressing, salt or pepper to taste.
- Toast the sandwich rolls if so desired.
- Depending on the size of the bread, add about one cup of the Caesar salad mixture to each sandwich roll. Enjoy!
