Which came first...Caesar salad or chicken salad sandwiches? I'm not even sure, but I would bet on chicken salad. And who was the first to turn that salad into a sandwich? So many questions! But the real mystery is why it took so long to bring these two classics together into one perfect creation: the Chicken Caesar Salad Sandwich.
I guess the answer is not that important. What matters is that it finally happened, and that it's here for us to enjoy. And we’re not even limited to sandwiches. You can turn this recipe into a chicken Caesar salad wrap or even chicken Caesar salad crostinis or bruschetta. So many options, and all of them are equally delicious.

Substitutions
- Gluten free - for gluten free chicken Caesar salad sandwiches, you can substitute gluten free croutons and gluten free bread. Or you can skip the croutons and use the tops of the romaine lettuce as a wrap too.
- Parmesan cheese - I always recommend real Parmigiano Reggiano cheese. If you don't have that or it's too expensive, I recommend using Grana Padano cheese next.
Chicken Caesar Salad Wraps
Chopped chicken Caesar salad works great as a wrap too. Just place about a cup of the chicken Caesar salad mixture in a large burrito-size tortilla and roll. Perfect for a trip to the beach or the lake.
Chicken Caesar Salad Bruschetta
Fun bruschetta flavors are currently having a moment right now. Have you seen my smoked salmon bruschetta? Who would have thought of that ten years ago? Well, chicken Caesar salad makes a great bruschetta topper too! Just use the same method for the bread from the smoked salmon bruschetta recipe, then chop the chicken Caesar salad from this recipe into much smaller pieces, top the bread with it and you’ve got yourself chicken Caesar salad bruschetta! When I make chicken Caesar salad bruschetta, I like to finish it with extra grated Parmesan and more cracked black pepper. Optional tip: for better sticking power, lightly brush the bruschetta bread with a bit of Caesar dressing before topping with the salad.

Store in an airtight container in the refrigerator for up to 3 days if stored separately. If the chicken Caesar salad has already been spread on the bread, store the sandwich in an airtight container in the refrigerator until the next day.
Next Level Tips
- You could grill chicken just for this recipe. But, honestly, I use leftover chicken for chicken Caesar salad sandwiches. Most packages of uncooked chicken are one pound or more. So maybe you just grilled chicken for my Southwestern Chicken Cobb Salad for two people and you have leftover grilled chicken. This is the prefect recipe to use up that leftover chicken! You could also use leftover rotisserie chicken too.
- And what if you don't have leftover chicken but still want a quick meal? You can use the pre-cooked grilled chicken strips available at most grocery stores. I won't tell.
- Feeding the whole family? Just change the recipe quantity to 2x or 3x.

Yes, of course you can make your own Caesar salad dressing. Or you can use your favorite bottled Caesar dressing. Caesar salad dressing is one of those things that I have no desire to make. I love Caesar salad, but don't ask me to tell you what's in the ingredients. Raw eggs and anchovies? No thank you! But if you want to give it a try, here is currently one of the most popular homemade Caesar salad dressing recipes out there.
No, you can use a regular full head of romaine lettuce. Or spinach or kale. However, romaine lettuce hearts are crisper and tastier, so that's what I recommend.
If you can't find mini croutons, you can chop larger size croutons into smaller pieces or you can give larger croutons a few pulses in a food processor or blender.

Ingredients
- 2 cups romaine lettuce hearts chopped small
- 1 cup cooked chicken chopped small
- ½ cup mini croutons
- ½ cup parmesan cheese grated
- ⅓ cup Caesar salad dressing
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 hoagie or sandwich rolls (or bread of choice)
Instructions
- Combine all the ingredients in to a large bowl. Mix until all ingredients are coated with the Caesar salad dressing. Add any more Caesar salad dressing, salt or pepper to taste.
- Toast the sandwich rolls if so desired.
- Depending on the size of the bread, add about one cup of the Caesar salad mixture to each sandwich roll. Enjoy!
